Banana Bread
Kitchen Items:
Loaf pan. I love Caraway’s Loaf Pan. It’s the perfect non-stick pan without the toxic chemicals that can be harmful to your health.
Ingredients:
3 overly ripe bananas
1/2 cup applesauce (unsweetened)
1/4 cup greek yogurt or non-dairy yogurt
1/2 cup egg whites (approximately whites from 3 eggs)
3 TBSP chia seeds
1 tsp ground cinnamon
1 tsp pure vanilla
2 cups oat flour. (I use natural oats and pulse them in my nutribullet to make the oat flour). You could also use almond flour.
1/3 cup organic stevia or monk fruit sweetener (optional)
1 tsp baking soda
1 tsp sea salt
Coconut oil to grease pan
Instructions:
Preheat oven to 350 F
In a medium sized bowl, mash bananas
Add all other ingredients and mix well by hand
Pour batter into loaf pan
Bake at 350 degrees for 50 minutes, until golden brown
Allow to cool for 10 minutes in pan before removing onto a baking rack.
When fully cooled, serve or wrap and freeze. This will last in the freezer for 3 months.
