Brussel Sprout Salad
This light, refreshing salad is the perfect accompaniment to a great cut of meat. I love this with fish, chicken or beef! This is packed with flavor and does not disappoint!
Ingredients:
1 bag shaved brussel sprouts
¾ tsp sea salt
½ tsp black pepper
2 tbsp avocado oil (or olive oil)
½ cup shredded parmesan cheese
Juice of 1 lemon
½ ripe avocado (optional)
Truffle oil or Truffle salt
Garlic powder to taste (optional)
Instructions:
In a food processor, empty the bag of shaved brussel sprouts.
Add salt, pepper, lemon juice, avocado oil and parmesan cheese.
Pulse quickly 1-2 times to mix. DO NOT OVER MIX!
Taste. The mixture should be flavorful with a hint of lemon and salt.
Add the ripe, sliced avocado, the truffle salt or truffle oil and (garlic powder, if using).
Pulse in the food processor another 1-2 times until mixed. DO NOT OVER MIX.
Taste and adjust seasonings as needed.
Serve as a side or serve with crackers.
